SWEET AND SAVOURY RAINBOW FRUIT SALAD WITH HERBED POPPYSEED DRESSING
Fruits are the original dessert; it's in our DNA to crave their natural sweetness. Long before we were tempted with high-fructose corn syrup and artificial flavours, people refreshed themselves with juicy, fresh fruits.
1 large ripe pineapple, peeled and diced
2 large ripe mangoes, peeled and sliced
2 cups fresh strawberries, halved
2 cups fresh kiwi fruit, peeled, sliced
1 small red onion, thinly sliced (as desired)
RicherEarth Vegan Eats' Herbed Poppyseed Dressing (use as desired)
Arrange the pineapple, mangoes, strawberries, kiwi fruit, red onion, and mint leaves in large mixing bowl. Chill until needed.
Just before serving, pour RicherEarth Vegan Eats' Herbed Poppyseed Dressing over the fruit and gently toss to coat.
TIPS FOR SERVING
Spice things up! Add freshly ground scotch bonnet or chili pepper to your salad.
Fresh mint is a good addition to this salad. Add 6 - 8 leaves.
Here’s a super easy recipe to make fresh pineapple juice.
Step 1: Wash and peel your ripe pineapple.
Step 2: Chop the pineapple flesh and place in a blender.
Step 3: Blend until smooth. Add sparkling water to blender for desired consistency.
Step 4: Strain to discard fibrous pulp.
Blend pineapple juice with crushed ice and coconut water for a cool, tropical smoothie.
Garnish with mint leaves and/or pineapple pieces.
