Raw vegetables provide an array of vital nutrients, including vitamin C, vitamin E, folic-acid, beta-carotene, iron, and protein. Another benefit of raw produce is the presence of fiber (found only in plants ) also known as roughage. Fiber plays a significant role in keeping us healthy as it works to remove general toxins from our system. Fiber also helps to keep us regular, and reduces intestinal blockage. High-fiber produce include legumes, pulses, carrot, spinach, apple, banana, strawberry, pear and orange.
